Tex Mex Casserole
Hearty and spicy like you daydream about.
Loaded with classic Tex-Mex goodness — minus the carbs — this easy casserole will satisfy all your cravings.
And say goodbye to store-bought guac and packaged taco seasonings!
Making your own is simple, healthy and delicious.
Ingredients
• 650 g ground beef
• 50 g butter
• 3 tbsp Tex Mex seasoning see below
• 200 g crushed tomatoes
• 50 g jalapeños
• 200 g shredded cheese
Tex-mex seasoning
1 tbsp chili powder
2 tsp paprika powder
2 tsp ground cumin
1 tsp garlic powder
1 tsp onion powder
½ tsp chili flakes
½ tsp dried oregano
½ tsp ground black pepper
1 pinch ground cinnamon
1 pinch ground cloves
1 tbsp sea salt (optional)
Guacamole
2 ripe avocados, halved, stones removed, peeled
60ml (1/4 cup) fresh lime juice, plus extra to serve
1 small red onion, finely chopped
1 ripe tomato, finely chopped
2 garlic cloves, crushed
1 small fresh red chilli, deseeded, finely chopped
Salt & ground black pepper, to taste
Instructions
1. Preheat the oven to 200°C.
2. Fry the ground beef in butter on medium high heat, until cooked through and no longer pink.
3. Make Tex-mex seasoning by combining all ingredients then add Tex-Mex seasoning and crushed tomatoes to pan,
Stir and let simmer for 5 minutes. Taste to see if it needs additional salt and pepper.
4. Place the ground-beef mixture in a greased baking dish (about 9″ or 23 cm in diameter). Top with jalapeños and cheese.
5. Bake on upper rack in oven for 15–20 minutes or until golden brown on top.
6. Chop the spring onion finely and mix with the sour cream in a separate bowl.
Guacamole instructions
Place the avocado flesh and lime juice in a medium bowl and use a fork to mash until almost smooth.
Add the onion, tomato, garlic, chilli and lime juice and season with salt and pepper. Use a spoon to mix well.
Serve with a squeeze of extra lime juice.
Serve the casserole warm with a dollop of the sour cream, guacamole and a green salad.
